Course Sake

COURSE ABSTRACT

This 1 day course provides the participant with a basic understanding of sake knowledge for enjoyment and fun rather than an in-depth and technical knowledge. Throughout 7 hours, participants will discover many sake types and taste over 40 different premium sakes and Japanese liqueurs.

AUDIENCE

“Sake”, a well-known alcoholic beverage that originated from Japan, yet very little number of people know that there are so many types of sake and other Japanese liqueurs, and that in Japan there are over 1,000 sake breweries. This course’s main objective is to lead you to the basic understanding of Japanese alcoholic beverages through different types of sake, methods of producing, rice and region as well as many types of Japanese liqueurs. Japan Unfold will also guide you to know how to enjoy, keep these delicate products and teach one how to read the Japanese labels so that at least you know what type it is.

  • Grade and type of sake at a glance - How to enjoy and appreciate sake (How to taste)
  • Tasting 1: Sake by type, sake by rice and sake by yeast
Afternoon 13:00-15:00 (2 hours)
  • The painful steps of sake making process (How sake is made)
  • Sake chemistry (Nihon-shu do, Acidity and Amino Acid)
  • The terms found on labels
  • Traditional Method VS Modern Method (Sokujo, Yamahai and Kimoto)
  • Pressing and aging
  • Tasting 2: Yamahai sake, sake by nihoshu-do, sake by pressing
